To make this plant based, use maple syrup instead of honey.

Ingredients
- 1 1/2 cups whole wheat pastry flour
- 1/4 cup flaxseed meal
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
1/2 tsp nutmeg
1/2 cup brown sugar 1/4 cup honey 1/2 cup unsweetened applesauce
3/4 teaspoon almonds Extract
- 2 cups chopped carrots (about 4)
- 2/3 cup raisins

directions
Heat the oven to 375 degrees Fahrenheit. Sift in wheat and flax meal, baking soda, baking powder, salt and spices into a large bowl. Stir until combined.
In another bowl, combine eggs, brown sugar, honey, applesauce, olive oil and almond extract. Add lemon zest, carrots and raisins.
Add the wet ingredients to the dry ingredients and whisk until fully combined, taking care not to over mix. Pour the batter into a lightly greased 9 x 5-inch loaf pan and bake at 375 F for 45 to 60 minutes, until a tester inserted in the center comes out clean. Cool and cut into 1/2-inch slices.
